High on the Hog

Raising pigs for food on the family farm is an American tradition that dates back generations. Neighbors, family and friends would all lend a hand at hog killing time, making it a regular community event that brought people together. Over the years, the techniques used to slaughter and butcher hogs became akin to an art form passed between father and son. Today, hog killing is a dying ritual practiced by few but cherished by those who remember or still participate in it.
